Bolognese style spaghetti sauce with lentils by Sabarot
Ingredients
• Lentils of your choice (120 g)
• Button mushrooms (12)
• Onions (1)
• Garlic cloves (2)
• Tomato concentrate (1 tsp.)(½ tsp. if double-concentrated)
• Ripe tomatoes (5) or tin of tomato paste (1)
• Salt and pepper
• Thyme
• Bunch of fresh basil (¼)
• Parmesan cheese (50g)
• 250G Fiorini or Valfleuri pasta of your choice
Preparation
Step 1: Cook your lentils for 10 minutes (depending on the lentils you choose) in simmering water.
Step 2: Peel and finely chop the onion and mince the garlic.
Peel and coarsely chop the mushrooms.
Step 3: In a frying pan, sweat onions and garlic in olive oil. Add the drained lentils and mushrooms. Simmer and reduce. Then add the tomato paste and your hulled, cubed tomatoes (or tomato paste).
Step 4: Season, simmer and reduce the sauce. At the end, add finely chopped basil.
Presentation
Pair this recipe with your favourite pasta!
Cook the pasta and serve immediately with the sauce and parmesan.
