In the heart of Provence, in the small town of Mouriès, we discover Moulin Saint-Michel, established here in 1744. One of France's largest mills, Moulin Saint-Michel processes olive harvests for a large number of the region's farmers. Greatly affected by the coldsnap of '56, the mill was shut down for a four year period. Despite these difficulties, Moulin Saint-Michel reopens and many wonderful olive oils are created over the years to come. One of these is a delicious blend named Moulin Saint-Michel PDO Vallée des Baux. A perfectly made pairing of four olive varieties, the result is a intensely fruity olive oil with hints of green apple and walnut. Its peppered finiish makes it ideal with grilled meats, pasta dishes and  in salad dressings.
